2D plot (x,y) with third axis (z-axis) as color bar

I have a data set of three parameters. x-axis is the time in hour:mm, while y-axis the the number of hours i.e. 1, 2, 3 10..20 ..40....etc. and z-axis is the paramter that i want to plot agiants x, y and represnet as colour bar.

Can somebody help me please?

Thanks ... i just read about surf .. but surf is about 3D plot ... I just want to plot in 2d-fashion as illustrated in attached figure ... here x-axis is time ... y-axis number of hours and z-axis is the beta variation
