volume visualization for geographic data

i am running an ocean hydrodynamical model that produces 4d results where the variables for the x and y are geographic coordinates (degrees).
it would be great for me to be able to visualize the data using volume visualization functions on the geographic axes (something like slicem).
it seems to me that the mapping toolbox only works for data where x,y data are degrees and cant do something like x-degrees y-depth C-concentration
am i missing something or is this impossible?

i am currently using the slice function so I think i need to be a little more clear here.
The advantage of using the mapping toolbox i want to use is its ability to scale the image with the environment's scale.
For instance the distance for a degree of latitude changes as we go north or south.
