I have been using MATLAB mobile for some projects, and it works well. I would however like to have a measurement on the strength of the wifi-signal. Is it possible to obtain this from my somehow? Can be live, but does not need to be.

No, MATLAB Mobile is limited to the data from the relevant Sensors Support Package. For Android "You can collect data from the following sensors: acceleration, angular velocity, orientation, magnetic field, and GPS."
