Question regarding Simulink - how to collect samples of a discrete signal on some interval

I am generating a discrete sine wave with many samples (let say 1000 or 10000 per period). Now I would like to collect only 100 of them for further processing. But those points should be collected on exact same time interval. Then I would process them as if they are stored in an array. Is this even possible?

I would log the signal and then configure the "Output options" as shown in this documentation link.
You can set the option to "Produce specified output only" and enter the output times as something like tStart:dt:tEnd. For example 10:0.001:100 will collect data between 10 and 100 seconds of simulation at an interval of 1 ms.

So, if I understand, this would export sampled data to Matlab Workspace. But, is it possible to process this sampled data back in Simulink?
