2D plot x-y axis

How can visualize on a 2D plot the variation of a variable say, z of size (100,1), that varies with both x and y, both of size (100,1)?

You have 3 variables x,y and z, I think you need a 3D plot

plot3(x,y,z)

Unless you want to change the transparency of the 2D plot according to z value

Want something like this. "z" is plotted against "x" and "y" for at different time instants. So I just need to know how to plot it for just one time instant.
