Create 3-D shaded surface plot for specific values of Z?

I want to draw my function of two variable so that the displayed graph gives me Z values between -5 and 5.
Z = arrayfun(@mFunction, X, Y);
[X,Y] = meshgrid(0:.2:1, 0:.2:1);
surf(X,Y,Z)
What command I should add? Thanks!
