The documentation is usually a good place to start. Take a look at What Is the Genetic Algorithm, at Genetic Algorithm Terminology, and at How the Genetic Algorithm Works to understand the basics. Then check out the other documentation sections and some examples for more details. Of course, the ga function reference page also has a lot of information.
