I have calculated fractional value of each image in an image array ,but how to calculate average of all the fractional values of an image array using matlab.

I don't know what fractional value of an image mean. To calculate the average of an array:
mean(yourarray(:))
or if you have the processing toolbox and your image is greyscale
mean2(yourarray)
