According to the documentation, both the command 'exit' and 'quit' terminate the current session of MATLAB, is there a difference when you terminate MATLAB using exit or quit if you simply want to terminate the instance and get rid of all the information on the workspace?

If you want to leave MATLAB, quitting the application, then exit and quit both do so. They are effectively synonyms. Probably created as such because some individuals may try to use one or the other.
From the help for exit, we see that it is indeed a synonym for quit. Note that quit has additional options allowed, which apparently also apply to exit.
help exit
exit Exit from MATLAB.
exit terminates MATLAB after running finish.m, if finish.m exists.
It is the same as QUIT and takes the same termination options.
