How does the time for the backslash operator depend on the type of linear systems (overdetermined and underdetermined)? Does it depend on whether the matrix is of full rank?

You should look through https://www.mathworks.com/help/matlab/ref/mldivide.html#bt4jslc-6 to figure out which algorithm is being used for your case.
Overdetermined and underdetermined would both likely be non-square.
