Obtain an CIELAB value for one colour

I have used the colour thresholder to extract one colour and I export this colour 'pink' into a variable in Matlab.

I then want to see the masked image again in a figure so I can save it, and also get an average LAB value for this colour.

Everything I do produces more and more variables but nothing with a value, just a large matrix. All the images I get are black and white.
