Graphing velocity and acceleration

I have instantaneous velocity at different time interval. I need to graph velocity vs time graph, and acceleration vs time graph using for loop.

v = [15 15.75 16.25 17.50 18.25 18.75 19.0 19.75 20.50 21.50 21.75 22];

t = 0:0.1:1.1;

Also, how do I develop an equation that will provide me smoothest curve for velocity and acceleration.
