How does the "Probe" block work

When I am probing something, surely I will like to have the value of it seen first. In SIMULINK, the probe block shows everything but the value. What I want is to run my simulation with some instances of the Probe block in my model and see the variable values. The idea is to make them visible as the simulation runs. If the probe block is not displaying it, what is the meaning of "Probing" then?
