How do i determine the optimal product mix for beverege manufacturing by discrete event simulation with Simulink/simevent

Dear all,
I am a student, currently working on a discrete event simulation program, i'm required to carry out the modeling of the manufacturing process of a beverage company, I am required to determine the Optimal product Mix for the manufacturing in order to utilize resources. I have taken a brewery as my case study and here are the conditions; Number of Products – 100 (Made to order) 3 Formation Vessels (Small – 30 barrels, Medium – 40 barrels, Large -50 barrels) Orders are Queue Dynamic At a single point in time, 3 types of products can be produced and the queue is building up (6 Weeks limit). - Different products require different time - Each Vessel needs to be cleaned before next Job; cleaning time is 4 hours for same kind of products and 8 hours for a different kind of product. - Ingredients are; Water, barley, hops and yeast (4 ingredients) - Some jobs could be combined up to the Maximum value of the fermentation vessel - Priority; The Longer in the queue, the Higher the priority - Product can be on queue for up to 5 Weeks (Maximum) - Small Quantities results to Small or no Profit
Based on the above conditions, my simulation program needs to re-order the jobs in thee queue and determine priority (which order to carry out first).
Please do help me contribute with your sugesstions and ideas on how best i will model the system based on the scenario above.
