How do I place a custom title in the metadata of a pdf document?

When saving a figure to a .PDF document by any method, for example saveas, print or File->Save as, the title in the metadata (accessible by File->Properties in Adobe Acrobat) is set to the path of a file in the temporary folder. How do I change this, and any other metadata when saving a figure in a .PDF document?

You can save the file to a .PS file format, and then convert the file to .PDF after editing the metadata of the .OS file. There is a file on MATLAB central that uses ghostscript to do this conversion, it can be found at:
