You should not be using GUIDE. See this thread.

You can set the max property to control the maximum number of lines.

Use "uitextarea". The Value properties is cell array of strings so you can obtain the multiline text from ui.

Just a note: this is what you should use if you're using a uifigure instead of a figure. AppDesigner is based on uifigure and GUIDE is based on figure (although you can write your own GUI without GUIDE or AppDesigner and use either).
