Breathing data poincare analysis

Why i plot my breathing data , there are multiple peaks in single epoch ( Not very Regular) .To analyze my data i need only a single peak in each epoch. What should i do?

Get better data? Breath more regularly? Use shorter epochs?
How is this a MATLAB question at all? Maybe what you need is to figure out how to ask a better question if you want a useful answer.
