How to apply SVM on training and testing data

I have two matrix. 1 column of both matrix contains labels. How can I apply SVM Classifier for more than 2 classes

You can use the fitcecoc function from the Statistics and Machine Learning Toolbox to fit multi-class SVMs.

I've never used these models myself, so I can't really give an advice beyond knowing that this functionality exists. I'm also not sure if you do all the specific things you are hoping for (e.g. the different kernels), but there are a lot of input parameter options.
