Can MATLAB be installed on Apple MacBook Pro 16 (Apple M1 pro met)? Which version of MATLAB works properly? Can I benefit from all features of MATLAB (including simulink) on such a system?

Yes, R2020b update3 and later is working on Rosetta 2 translation including Simulink and almost all toolbox. The latest version is always the best.
PS: A version of R2022a beta is running natively on Apple silicon but only Matlab itself without Toolbox or Simulink.
