Extracting the Data of the neural network

Is there anyway to extract the data of the nerual network to plot them seperately?

for example,

Let us say that we have the following outputs from a neural network:

Can we extract x and y for the first figure for each data set (i.e., x and y for the Data :: i.e., x and y for the fit :: i.e., x and y for Y = T ) ?

I understand that you want to extract the values given in a plot/figure.
