Hi, how can I plot this function, with even and odd parts?

Use piecewise and fplot.
syms t
xThree = piecewise( t <= 2 ,1 ,(t > 2) & (t <= 4), t-2, t >= 4, 1)
xThree = 
fplot(xThree)
