Using Simulink and a TI C2000 how to collect and log multiple signals over serial communications.

I currently have a TI C2000 Launchpad XL and can use Simulink to measure the position of a motor shaft from an encoder. I can program the board to calculate the position and speed, but I am only able to get one out at a time. The goal would be to have the Board calculate both position and speed then send that data to the PC. I am attaching screenshots of my models. Any insight would be helpful.
