Is it possible to perform an A/D conversion using matlab?
From what i understand, matlab can read in data via the serial ports but it does require the data to be in binary or text form, So is it even possible to input an analogue signal into matlab and create a function that will perform the A/D so the signal is then in a digital format.

No digital computer can store or transfer analog signals. A/D conversion must always be performed at the hardware level.
MATLAB can (in some cases) be used to control the parameters of the conversion, such as the sample rate or resolution.
The closest you can get to "raw" A/D conversion is to hook the signal source to the microphone input (and hope it doesn't burn it out!), and then request to read audio samples using audiorecorder() or wavrecord()

Do not use wavrecord, it is depreciated and slated to be removed.
