Muy university has recently added to Moodle MATLAB Grader. I was checking the options for this activity and I found a custom parameter section, where I suppose you can indicate, for example, the maximum number of submissions. I was wondering if there is a list of such parameters to set the start and límite time to work on the problems.

You should be able to use your regular Moodle assignment/task settings to set start/end times and dates, assign assessments to groups/cohorts of learners, etc. In that regard, MATLAB Grader is just like any other assignment in a Moodle course.
The other answer given below is valid for if you want to limit submission attempts. However, most courses/assignments do not need to limit attempts, as MATLAB Grader is designed to work best when giving learners feedback on their submissions. I would encourage you to reach out to your Customer Success Engineer to explore some best practices when using MATLAB Grader in a Moodle course.

Limiting submissions is the only custom parameter currently supported by MATLAB Grader. See this answer for details on how to use it: https://www.mathworks.com/matlabcentral/answers/421876-how-do-i-restrict-the-number-of-student-submissions-for-matlab-grader-coding-problems?s_tid=srchtitle

No. Custom parameters are tool-specific. You cannot create your own parameters. Currently, MATLAB Grader only supports limiting submissions. Anything else entered as a custom parameter is ignored.
