I am trying to do a bilinear interpolation using interp2. I got X (matrix of latitudes in decimal degrees of my reference points), Y (that of longitudes), and Z (matrix of reference field). Also have XI and YI as vectors of latitudes and longitudes of the points to which I am interpolating to. I just don't know how to get XI and YI to work as they are in vector format, and I think this is what is causing me the problem.
Any thoughts would be greatly appreciated.

You'll have to use scatteredInterpolant(). Sorry, I don't have any demos for that so you'll have to do it on your own with help from the documentation.
