I've figured out how to display numbers on the command line the way I'd like them 'longG' - but am having trouble getting them to show up in the variables window in the same format. In the attached screengrab, I'd like to set the display format of column 1 in this array to 'longG' and see all the digits with no exponential notation.

You need to do both Choose file and Insert Image to make the "screengrab" show.

Use Preferences -> Workspace and select a format there.

there is no format optio in Preferences -> Workspace.
OP's question is still valid. I also haven't found any way to change display format for variables (for example tables). Sometimes its short, sometimes engineering which is really annoying
