evaluating polynomials on given data

Hi I have code

x=[1:5;1:5];
y=x'
V1=x1+x2+1
V2=x1+x2x1+x2-8

for i=1:5; 
M=subs(V1,[x1 x2],[y(i,1) y(i,2)])
end

I got values step by step how I can form a matrix by these values in this code . how I evaluate both polynomial same time and I can get matrix of answer and values must comes in points not in fraction

please help
