I do not know about specific cameras; changing exposure appears to be a basic feature. See

Changing USB webcam properties is currently only supported for MS Windows. If you are using a different operating system you will probably need to use an ipcam instead of a webcam in order to be able to configure exposure.

Is the question possibly about how to program a series of different exposures to be triggered as a sequence, such as you might want to do for HDR ? If so then that might be trickier.
