How do I plot a 3-Dimensional graph from an excel sheet?

Hi all, I'm new to variable and if someone can guide me through the basics, it would be of great help. I have 3 variable, having Month, Year and my variable data, I have to plot them in 3-dimensions and represent them using color code, where the color codes should represent the ranks. I can currently import the excel sheet into MATLAB, read the file. Can someone please help me on how to proceed?
