How do I find a polynomial equation with MATLAB if I only have points on the curve?

I have seven points on the curve and none of them are intercepts. How would I find the answer WITHOUT using any of the polynomial-specific functions (e.g. polyfit())?

James Tursa, this is homework. I do not know how to do a least squares polynomial fit. Is that process the algorithm for polyfit?
