How do I interpolate scattered data colourmap values to output colourmap values of gridded query points

I have scattered data values each with a colour map scalar value. e.g, x;y;C and I have gridded data in x;y.

I want to interpolate the colour map values to find the C values of the gridded data. How do i go about doing this? I can't seem to work out how to use this using the interpolation functions

You can try using the "scatteredInterpolant", or "griddedInterpolant" functions.
