MAPPING TOOLBOX LAT/LON vectors are not strictly monotonically increasing, hence zi = interp2(LO​N,LAT,GAIN​,loni,lati​) ; gives me errors

I have a data file (.csv) that has satellite gain antenna vs. latitude (LAT), & longitude (LON) see plot of this data below.
I would like to find the gain vs. any arbitrary LAT/LON position. Because of the concentric circle nature of antenna patterns (for lack of a better term) the LAT/LON vectors are not strictly monotonically increasing, hence zi = interp2(LON,LAT,GAIN,loni,lati) ; gives me errors.
How can I use a MATLAB Mapping Toolbox functions such as geointerp on the imported data to fix this issue.

Look at geointerp which properly projects lat/lon onto a plane so the interpolation values make sense.
