When I use the publish command, even on the example code included in the matlab documentation, the LaTex image files that are published turn out to be 2 pixels by 1 pixel

You can publish file with images of size you want in Latex using "Publish" button with custom setting i.e. image pixels setting.

Unfortunately, that setting is not affecting the equations, just the figures. Any other thoughts?

if you are using MATLAB Online (or using MATLAB R2025a release), I suggest you take a look at the new plain text .m live scripts. it might work better for what you are trying to accomplish.

The quality of LaTex equations is significantly improved for live editors. I suggest using a live editor (.mlx) file and using the export function. You may alternatively use Export from Live Editor Toolstrip --> Export --> Export as PDF.
