You need to have the Symbolic Mathematics Toolbox installed and licensed.
The Symbolic Toolbox is included in the Student Version (but might not be installed by default), but is an optional (extra-cost) package for the other classes of MATLAB license.
Try
which -all syms
If it shows a file then you might already have the toolbox installed, in which case it would be a license matter.
