How would i go about plotting a density profile with depth?

I have several files containing data collected from a body of water, the first column is depth, the second if temperature and the third is salinity. I don't have much experience with Matlab so am unsure how to begin to plot a density profile. I have been instructed to use the UNESCO equation of state:

'Rho=1000+(0.7968*Salinity)-(0.0559*Temperature)-(0.0063*Temperature^2)+(0.000037315*Temperature^3)'

I have managed to plot temperature and salinity depth profiles but beyond that my skills are rather novice. Any help or insight would be greatly appreciated because i am pretty stumped.
