How to simulate a non constant velocity moving target in the toolbox examples

You can update the velocity at each simulation iteration to mimic different trajectories. Below is an example for circular trajectories:
T = 1;
myPlatform = phased.Platform('Velocity',[1;0;0]);
N = 360;
pos = zeros(3,N);
vel = zeros(3,N);
for m = 1:N
[pos(:,m),vel(:,m)] = step(myPlatform,T);
v = [cos(m*pi/180);sin(m*pi/180);0];
myPlatform.Velocity = v;
end
plot(pos(1,:),pos(2,:))

Sir, how to see the target's path in the spectrogram,i.e how to see the doppler changes of a target in the spectrogram

You should be able to just call spectrogram on the received signal. If you are using pulsed radar, then you may need to use slow time data.
