Image Contour Detection for Grayscale image with textured background

Hello! I am trying to do a contour detection of 2 mice and have tried several methods found on matlab including imcountour, contourf, and edge. I want the final product to be what is shown here:https://www.mathworks.com/help/images/ref/imcontour.html but given the quality and composition of the image I need to optimize the code.
