How do I set the title, xlabel, ylabel, or zlabel of an axes using the property inspector?

I find it a little strange that the Property inspector of GUIDE does not list 'Title', 'XLabel', or 'YLabel' as properties of axes objects.

You are not able to set the title, xlabel, or ylabel in the property inspector of GUIDE because they are handles to text objects and not just strings.
As a workaround, you can set these properties in the OpeningFcn of the figure. The following is an example code for an axes in GUIDE. It will set the xlabel of the axes.
str='My X label'
set(get(handles.axes1, 'xlabel'), 'string', str)
% Use tag name of the axes which needs to be changed.
