How to read, plot and analyze data in .dat format in an ongoing/online manner?

Dear MatLab Community, I would like to start to learn how to visualize and analyze electrophysiological data while recording. Now we visulaize it online with neuroscope.

The data structure is in .dat format, I can read and analyze it offline. Now, I want to start to read about the above topic. WHere shall I start? PLease share some keywords which effectively lead to the suitable help and tutorials.

Dear Sanjana, thanks for your suggestion which is helpful anyway. However the key point of my question is how do this online, not offline. In other words, how to acces for example data in dat format while it is still recorded. An example: how to start an usb webcam video recording in matlab if my LFP data crosses some threshold while recorded.I would need tutorial for such task.
