Can anyone tell me which filters are available to evaluate phase and amplitude?

I want the output of the filter (filter response) to be amplitude and phase plots.(I have the data with me) i just want to the filter which can be used

You can get the outputs from any filter desired; presuming you have the Signal Processing Toolbox, you might look at
fvtool - Filter Visualization Tool
for a prepared user interface that sounds like what you might be looking for...

I would use the freqz function for discrete filters, and freqs for continuous filters.
