How can I acquire position data from an encoder?

For my senior project we need to use two encoders to track the vertical and horizontal position of a device. I'm a mechanical engineering major, so I don't have much of a clue of where to even begin. I figure I might need to get the Data Acquisition Toolbox for starters. Where do I go from here? Are there any tutorials about how to do this?
